Shoots and Spores is a premium mushroom cultivation company based in Sparta, Georgia. We specialize in supplying gourmet mushrooms to chefs, grocers, and regional distributors who require consistent quality, culinary performance, and sourcing they can trust.
Our mission is to serve the Southeastern food community with mushrooms that are thoughtfully grown, professionally handled, and built for the demands of commercial kitchens and produce departments.
A Fully Integrated Cultivation Model
What sets us apart is our full control of the cultivation cycle. All spawn, substrate, and fruiting blocks are produced in-house — giving us complete oversight of quality, yield, and food safety from culture to harvest.
We don’t rely on outside spawn suppliers or mass-produced grow blocks. Every mushroom that leaves our farm begins as part of our own production system, developed and refined to ensure optimal performance at scale.
This closed-loop approach is what allows us to meet the reliability expectations of our distribution partners — and positions us as a trusted source within the industry.

We grow mushrooms for practical use in foodservice and retail. Our core offerings — Lion’s Mane, Blue Oyster, Golden Oyster, King Trumpet, Shiitake, Chestnut, and seasonal specialties — are selected for their flavor, structure, visual appeal, and adaptability in the kitchen.
Our products are delivered through regional distributors and select retail partners, and are trusted by chefs who value consistency, freshness, and clean cultivation methods. Shoots and Spores is Certified Naturally Grown and committed to chemical-free practices at every stage.
From Startup to Regional Supply
Shoots and Spores was founded in 2020 by Filip Velimirovich and David Avant with a clear goal: to build a serious mushroom farm that balances technical integrity with regional relevance.
After gaining traction with chefs, farmers markets, and early wholesale clients, the operation relocated in 2024 to its current home — a converted 1891 cotton depot in Sparta, Georgia. Formerly operated as Sparta Imperial Mushrooms, the facility now serves as our full-cycle indoor farm and distribution staging hub.
